Rivellino: our organic Canine monovarietal oil
The quality at the center of our production
We are proud to introduce you to Il Rivellino, our superior quality extra virgin olive oil, obtained from the renowned Canino olives.
We only use olives produced in our company, and the production process is meticulously cared for at all stages.
The olives are harvested when they are still green to obtain a better and more storable oil, thus giving up quantity in favor of the resulting better quality.
The milling takes place within a few hours, with a cold extraction system,
subsequently the oil is stored in stainless steel tanks with a controlled atmosphere and temperature. The packaging takes place only at the time of ordering.
The production process described above, together with the pedoclimatic characteristics of the area and the Canino variety, allow us to obtain a balanced oil, suitable for all uses, especially raw.
The flavor is medium fruity in which notes of artichoke, green almond and fresh grass are appreciated; in the finish you can also appreciate a slightly bitter and spicy aftertaste, due to the good presence of polyphenols; these ensure good shelf life of the oil and nutritional qualities due to their antioxidant, hypoglycemic, anticholesterolemic and beneficial properties on the arteries.
The acidity at the time of milling is generally between 0.1
and 0.3 g/l, a more than recommended percentage.
The color of the oil as soon as it is produced is emerald green as the olives are harvested green, rich in chlorophyll, as the months pass it becomes less intense and also takes on golden reflections.
Another advantage of the Canino variety is the long shelf life of the oil.
Since ours is an organic 100% cultivation, we do not use any synthetic chemicals but only natural substances.
